This was a by the by recipe because I´m sick of buying breakfast cereals which then nobody bothers to eat later. The ingredients are very simple and as far as I know, every beginer in Spain has had a go at this yogurt cake which in my case turn to muffins. I hope the English spoken world can forgive me for calling this recipe a muffin.
In this recipe we use the yogurt tub as a way of measuring, so when I say 1flour I mean the yogurt tub full of flour. In this case it is plain yogurt but you can change the flavour.
Ingredients
1 natural yogurt
3 flour
2 sugar
3 eggs
1/2 envelope royal baking powder
1/4 vegetable oil
2 choco crispies
Preheat the oven at 170C. Get 15 silicone cupcases ready.
In a big bowl place the ingredients following the order given and mixing with a whisk after each addition. Start with the yogurt (don´t throw away the pot), sugar, eggs, oil, flour, royal and finally crispies. Once they are all mixed, divide the mixture into the cases and don´t worry if they come to the top. Place them carefully in the oven and leave them for 30 minutes or until they are golden brown. Take them out and leave them to cool down completely before storing them in a tin box.
